Fluctuation Theorem(s) and their experimental tests

Fluctuation theorems are amongst the very few general statements for out of equilibrium systems. They are in fact so general, that the question arises as to what are they telling us about a system, and what is their experimental verification really testing. I will attempt to review the situation skipping the technicalities.
